Santoku are Japanese general purpose kitchen blades, much like the Gyuto and Western chef’s knife, and are adept at cutting a wide variety of foods. They are extremely popular with home and pro users, due to their overall compact and handy size, and great versatility. Takamura is known for producing beautifully made knives, using some of the most advanced steels available on the market. Their high-grade fit and finish is well known, and especially outstanding at this price range. The 170mm Takamura R2/SG2 Migaki Santoku is laser thin, nicely balanced, and razor-sharp right out of the box. Rounding out the package is the now famous red laminate Western handle with stainless bolster. The combination of these features makes these knives a joy to hold and use, and along with the excellent Takamura grind, gives them a very high level of performance. The R2/SG2 high speed powdered steel core takes an extremely keen edge and keeps it for a very long time. It is also very stain resistant and wrapped in a softer stainless-steel cladding for toughness. As opposed to some other exotic steels, R2/SG2 is also not too hard to maintain sharpness on or sharpen.
